The mashbill

Our mashbill of 70% Corn, 16% Wheat, and 14% Malted Barley is rare on the market, beloved by a few outstanding brands for it's well-balanced flavor, ranging from caramelized honey, cinnamon, buttered toast, tobacco, and hay.

Pre-Proofing

We undertake a unique process and proof our bourbons down from 125 proof to 100 proof (45% ABV) BEFORE barreling, using limestone-filtered water from the Kentucky-Tennessee border. Pre-proofing softens the bourbon as it ages, resulting in a luxuriant, silky pour. There is hardly any bite to our whiskey whatsoever, by the time it's ready to bottle.

Staving

We get our barrels "wet" and full of flavor, then we break them down by hand, disassembling the finishing barrels, cutting the barrel staves to stave, and toasting each stave low and slow for hours. This ensures a 360 degree toast, and imparts maximum flavor impact when we add the staves to our aged bourbon barrels.

Tasting

Now is the fun part. We taste the bourbon every few days, while staves are working their crazy magic, to determine the perfect time to pull. Every time we taste, it's a new bourbon - and not a linear progression either, as there are wild flavor swings throughout the process. The bourbon lets you know when it's ready.

Slow-proof and Bottle

When the barrels are done, we're tasting to proof - every batch is different - and adding that filtered water slowly, allowing for a harmonious integration of flavor. Then into bottles we go, to deliver a showstopping product into your hands.
